Ingredients for 1 person:
4 large peaches 5/6 amaretti or almond macaroons 60 g (2 ½ oz) almonds, chopped a knob of butter 1 egg, lightly whisked a glass of white wine sugar, enough for a sprinkle. Preparation:
Use peaches that can easily be halved and remove the stone. Using a spoon, scoop out part of the flesh and place it in a bowl. Mix it with some crushed amaretti or almond macaroons and the chopped almonds, a little butter and the egg in order to form a good firm mixture. Use this mixture to fill the peaches, making sure to fill them well, making a little mound on top of each half. Sprinkle with sugar and add a knob of butter. Place the peaches in a greased tray, alongside each other, and pour a glass of white wine into the tray. Place in a fairly warm oven until the peaches are cooked and golden brown. Apricots can be prepared in the same way, allowing three apricots per person. To complete the dessert, the fruit can be served with a good egg custard, flavoured with your liqueur of choice.
